Ginger & Cinnamon Pear Muffins

These muffins are wonderful to have for dessert or for breakfast!! Dress them up with a little glaze or keep them simple, either way they are yummy yummy yummy!!

Let's get messin' in the kitchen!!


Ingredients:


3 lg eggs

1 1/2 C sugar

1 C oil

2 C pears, or fruit of your choice

2 tsp vanilla

3 C all purpose flour

2 tsp baking powder

1 tsp baking soda

1 tsp salt

1 1/2 tsp cinnamon

1/2 tsp ginger

1 C nuts, optional


  1. In a large bowl combine the eggs, sugar, vanilla and oil until smooth. Next stir in the fruit.

  2. In a separate bowl mix the flour, baking powder, baking soda, salt and ginger together then add to wet ingredients. Stir until just combined, don't over mix.

  3. Grease or line your muffin tins and fill about 2/3 full. If you want to make this in a loaf pan, just make sure to grease your 2 8X4 in pans.

  4. Bake at 325 F for dark or coated pans, 350 F for glass or shiny pans 50-55 minutes for a loaf or 20 minutes for muffins
